Step 1
In a large bowl, whisk together the chickpea flour and water until well combined.

Season with salt to taste and allow the mixture to rest for at least 12 hours.

Skim off any froth that has formed on the surface and stir the flour mixture.

Heat the oven to 425°F (220°C).

Prepare a large rimmed baking sheet by drizzling the olive oil to coat the bottom.

Pour the batter through a fine-mesh sieve onto the pan, making a layer about 1/4 inch (6 1/2 mm) deep.

Stir the batter with a wooden spoon to absorb the oil and sprinkle with pepper.
